Eureka “all-American” restaurant will open at Pearl West in Boulder

Boulder is getting another hip American restaurant in the heart of town.

Eureka is set to open Sept. 5 at Pearl West, 1048 Pearl St., where the Boulder Daily Camera offices once stood. That's right across the street from The Kitchen, The Kitchen Next Door, Salt and Wild Standard.

The national chain already has 20 restaurants, most of which are in California.

The menu at Eureka will feature dishes like lollipop corn dogs, which are made in-house with Polish sausage and sweet corn batter, and served with a spicy porter mustard; a slow roasted beet salad with arugula, apple, walnuts, orange segments, asparagus, fennel, walnuts and goat cheese finished with watermelon pop rocks; and a burger topped with a bone marrow porcini butter, grilled onion, roasted tomato and mustard aioli.

The "all-American" beverage program includes 40 American craft beers on tap and more than 50 small-batch whiskeys. Like any Boulder restaurant worthy of its locale, at least one cocktail (Some Like It Hot) is made with a firewater tincture.

11 a.m.-11 p.m. Sunday through Wednesday
11 a.m. to midnight Thursday through Saturday

“Hoppy” hour: 
2 p.m. to 6 p.m. daily

Brunch:
11 a.m. to 3 p.m. weekends
