Denver Distillery sets grand opening for Jan. 26

The new aptly named Denver Distillery is ready to start pouring along South Broadway.

Owner Ron Tarver and head distiller Chad Peters are capping off their six-years of preparation with a grand opening 6 p.m. Friday. Denver Distillery is filling 244 South Broadway, the site of a historic hotel in the 125-year-old Imperial Building in the Speer neighborhood.

Denver Distillery plans to specialize in crafting boutique artisanal liquors made from locally-sourced ingredients. The company is starting out with a silver rum, dark rum, lemon-lime sweet feed shine, punkinhead liqueur and strawberry-kiwi liqueur.

"From the bespoke still built on-site by head distiller Chad Peters to open-air cypress fermentation tanks, this labor of love offers Denver the exciting possibility to drink cocktails incorporating ingredients distilled in the same room," according to Denver Distillery.

“I want it to be a creative enterprise. I want all my employees from the bartenders to the bookkeeper to learn to distill not just so that they can know the process but also because I want them to come up with ideas for distillates that they can then make right here at Denver Distillery,” Tarver said in a statement.

In addition to its own spirits, Denver Distillery will also offer a rotating line of local beers and ciders as well as spirits from distilleries such as Leopold Bros, Deerhammer, Golden Moon, Woody Creek and Downslope.

Denver Distillery is also partnering with Boulder-based Tip Top Savory Pies to pair its cocktails with New Zealand-style pies.
