Paleo restaurant is now open in Highland, according to “Chief-Foodie Officers”

A new fast-casual breakfast and lunch spot, Just Be Kitchen, opened today in the space formerly home to Mona's at 15th and Platte streets.

It will be Denver's only completely gluten-free and paleo full-menu restaurant, according to a release.

“We want everyone to feel nourished and cared for when they are here," Jennifer Peters, who the release identifies as "Chief Foodie Officer," said in a statement. "We want our guests to be able to have a ‘mindful moment’ at Just BE Kitchen, and feel like they are doing something good for their minds and bodies. Food is the vessel for the experience we want to create, because food is at the heart of total well-being.”

The kitchen will be headed up by chef Carrie Baird, whose resumé includes Brazen, Euclid Hall and Rioja. Among the menu items are the Meatzza, a paleo, gluten-free and grain-free take on pizza, with sausage base instead of dough, and the JBK Bone Broth, made from the bones of grass-fed and pasture-raised animals and the option to add garlic, ginger, parsley, turmeric, sea salt or scallions. Prices range from $8 to $13.

Just Be Kitchen also will serve more portable snacks like muffins, chia-seed coconut yogurt and paleo chocolate chip cookies. You can take a look at the full menu here.

Hours are 7 a.m. to 3 p.m. daily.
