Bamboo Sushi’s opening date will be Nov. 27

After warming up at an Avanti Food & Beverage stall, Bamboo Sushi is opening its first Denver brick-and-mortar location.

Update: Bamboo Sushi has pushed its opening date back to Nov. 27.

After warming up at an Avanti Food & Beverage stall, Bamboo Sushi is opening its first Denver brick-and-mortar location.

The Portland-based restaurant will open at 2715 17th St., between Recess Beer Garden and Il Postino, just a few blocks from its first Denver home in the Highlands.

The fully grown Bamboo Sushi will have a larger menu and more upscale digs than it did at Avanti. The menu includes Japanese-inspired small plates, signature rolls, nigiri, sashimi, salads and larger shared plates like Saikyo Miso scallops and Snake River Farms XO flank steak. The bar will offer cocktails made from seasonal ingredients, plus Japanese whiskeys, Shochu, Bamboo’s private label sake, wine and beer.

“It’s been great to introduce Denverites to Bamboo through Avanti but we’re really looking forward to giving our fans the full Bamboo experience at our new LoHi restaurant,” said Kristofor Lofgren, founder of Bamboo Sushi and the Sustainable Restaurant Group, said in a release. “We’ve built a truly unique and expansive supply chain that brings our guests the highest quality, sustainable fish on the market today. As we grow our footprint in Denver our aim is to continue to inspire change in the way people eat, the way restaurants do business and the way we treat our environment.”

Bamboo Sushi will be open for dinner from 5 to 10 p.m. daily. Happy hour will be from 5 to 6 p.m.
