As Stanley Marketplace approaches the anniversary of its first opening, The Juniper Pig becomes the 19th food-and-drink business to open inside the 100,000-square-foot space.
The founder of Stanley’s new butcher shop? A veterinary surgeon.
“The way animals are treated on some factory farms is unsettling,” Dr. John Stephan said in a release. “And many meats and processed meat products are of limited quality and frankly a disrespectful use of animals. Our goal is to provide natural and nutritious premium products to our customers from producers committed to the highest ethics of animal husbandry and the most sustainable approach to the welfare of their farms and animals.”
Stephan and his team moved into a small space on Stanley’s food corridor and they’re packing every square foot of it. They’ve got Italian-made, climate-controlled meat and charcuterie display cases, a German grinder, a French rotisserie and a custom, state-of-the-art meat aging cabinet from Quebec City with a wall of pink Himalayan sea salt.
They’ll offer fresh meats, charcuterie, sandwiches, take-out dinners and more, including salads and other vegetarian options.
“We are a neighborhood butcher shop,” Stephan said. “We want to learn your names and we want to see you again. Our neighborhood will eventually grow to include people from all over. But right now we are focusing on bringing the highest quality and most delicious food possible to the Stanley community.”
