After months of planning and weeks of remodeling, The Bagel Store is ready to reopen in southeast Denver on Sept. 15 as Rosenberg's Kosher.

Yes, that Rosenberg's.

The two bagel shops announced the merger back in October 2016, promising that the 40-year-old Bagel Store in the Washington Virginia Vale neighborhood would remain parve kosher after its remodel.

With support from Rosenberg's Bagels, the shop formerly known as The Bagel Store at 942 S. Monaco Parkway will be the largest kosher purveyor in Colorado.

“By merging The Bagel Store with Rosenberg’s, we’re ensuring the longevity of kosher food in Denver,” The Bagel Store owner Beth Ginsberg said in a release. “The Bagel Store has served the Jewish community for more than 40 years, offering kosher-observant Jews the rare opportunity to eat outside their homes. Through joining forces with the up-and-coming Rosenberg’s, it secures The Bagel Store’s future. It’s old-meets-new in the very best way.”

Customers of the southeast Denver and Jewish community staple will still find the usual bagels, challahs, macaroons, breads, hamentashen and Mandel bread and more, now accompanied by deli fare like house-cured and smoked fish, spreads and salads.

“We’re excited to take our relationship with Denver’s Jewish community one step further by offering our same outstanding bagels, now for those who observe the traditions of Kashrut,” Rosenberg's owner Joshua Pollack said in a statement.

The merger and renovation also brought outdoor seating, a dairy room and a kosher smokehouse, and Rosenberg's Kosher will have large wholesale and catering components off-site, where they'll produce more than a million bagels a year. The bagels will be available at the Hyatt Regency, Rose Hospital, the Denver Convention Center, Whole Foods Market and more

Hours at Rosenberg's Kosher are 6 a.m. to 2 p.m. Monday through Wednesday and Saturday and Sunday, and 6 a.m. to 4 p.m. Thursday and Friday.
