The owners of Cherry Creek's Bombay Clay Oven were forced to close their fast-casual concept, Saucy Bombay, after five years in Republic Plaza, but they finally found a new home for it in Denver.
Husband-and-wife team Marshall Miranda and Rohini Saksena will open the new Saucy Bombay across from East High School on Colfax Avenue on Thursday morning.
And this might come as a surprise: Saucy Bombay will be the only Indian restaurant on East Colfax in Denver. (Related: Here are places to eat on East Colfax.)
“It didn’t hurt that our daughter started high school this year at East,” Saksena said. “Having had such success and longevity in the Cherry Creek neighborhood — quite a feat given other restaurant’s quick lifespans in the area — it was important to us to remain close to our roots but expand to an underserved area.”
Saucy Bombay lets diners build their own meals, which range in price from $8 to $11. You can check out the full menu here.
Hours are 10:45 a.m. to 9:30 p.m. daily.
